Quinoa For Breakfast
Since I'm gluten free, I don't eat wheat based cereal any longer. Every once in a while I eat some quinoa for breakfast with some cinnamon and either a dash of brown sugar or a splash of agave nectar. Cinnamon is supposed to lower cholesterol, so I don't feel guilty if I use it liberally. Quinoa is cooked just like rice. For every cup of quinoa, use two cups of water. Although it is expensive, it fluffs up to more volume than rice and I think the nutrional benefits are worth the cost.
