Spicy Rice Medley


What do I do when I'm inundated with yellow pear tomatoes? I try to think up ways to use them in different recipes. I decided to make up a rice medley and use all the yellow pears I just picked. I decided to make a meatless all in one meal which was satisfying to the taste buds.


I roasted a couple of poblano peppers under the broiler till the skins blistered. I cooled them, peeled them, and discarded the peeled skin. Then I chopped the peppers and halved the pear tomatoes. Meanwhile I cooked a cup of brown rice. 


The recipes I post here stem from a desire to eat as healthy as we can within our budget. Gary and I both face health challenges but we strive to overcome them by staying active and eating the best food we can. There are many foods which help improve the odds like eating a variety of fruits, vegetables, and whole grains. 


While the rice was cooking, I sauteed a small onion, some fresh ginger, and two stalks of celery in some olive oil till softened and browned a little. I added some ground cumin seed, oregano, and freshly ground pepper and sea salt.


I mixed all the ingredients into the rice when it was cooked and served it with some fresh red tomatoes and cucumber slices. If your mouth starts to get too warm from the poblano peppers just take a bite of the cucumber to cool your palate. This all in one dish hit the spot; it warmed our innards, stuck to our ribs, and tasted good too. Thanks for reading and for all your comments.
