Honey and Lime Marinated Shrimp

Honey and Lime Marinated Shrimp

3 pounds of cooked shrimp, peeled and tails removed
juice from two limes
2 tablespoon fresh ginger chopped fine
2 tablespoons honey warmed slightly
2 tablespoons scallions, or red or white onions, chopped fine
2 tablespoons stone ground mustard
1/4 cup of fresh cilantro, chopped medium

Place cooked shrimp in a steep sided bowl or a large Ziploc baggie. Whisk all ingredients together and pour over shrimp and marinate at least half a day, but overnight is better. Stir the marinade once an hour for the first four hours. In the closeup it looks like I added some dried dill, couldn't hurt.

Just before serving place shrimp on top of bed of mixed greens one at a time. Drizzle the leftover marinade over the top. These are so good and can be made a day or two in advance. We're headed to our neighbor's for a late lunch today and I am bringing these shrimp along with some deviled eggs. If you don't like cilantro you can substitute some flat leaf parsley.   1. Decidedly flat leaf parsley - or dill, or even fennel. Lime is a magical marinade base isn't it?

  12. Hi Everyone, thanks, these were really a hit with all at the party, try it you'll like it, glad you are enjoying the recipes and now when I forget what to make I can look back at the ones I have made in the past. Ha.

    Oh and the deviled eggs I mixed in some stoneground mustard and a little dab of lime juice to make the yolks mix up easier. I also sprinkled them with some chilpotle pepper for color as I was out of paprika.
