Spinach Artichoke Dip

This spinach artichoke dip is quick and easy to make. All you need is one can of chopped spinach drained well and crisscrossed with a knife to chop, one can of artichoke hearts drained and chopped medium, 3/4 cup of sour cream, 1/2 teaspoon of dried ground chipotle pepper, and some salt and black pepper to taste.

Whenever possible I purchase store brands because they're less expensive. I also try to get no salt added if I can. Sometimes I'm shocked at how much sodium is in canned or processed foods.

I actually squeezed the liquid out of the spinach with my hands but it could be put in a strainer and left to drain. Then I put all the ingredients in a bowl and mix by folding. I'm serving the dip with lentil chips which are gluten and wheat free and actually taste good. Two more days till closing. Thanks for reading and for all your comments.

  1. Yum. I adore spinach - though the skinny man in my life considers it to be poison. His loss.

    I also get salt reduced cans whenever I can. And am appalled that by reducing the amount of an ingredient the price goes up. Grr.

  2. Oh, YUM! Loooooove this stuff. Wish I could eat just a little, but, no, I just dive in with my spoon!

    We're on the tail end of the donating bags of stuff part. A couple of pieces of furniture go this Friday. Part II and deeper cuts will start in Sept. Ohhhh, fun!

  4. Yummmmmm. I've made it with frozen veggies, not canned. Both ways seem pretty easy.

  6. Sounds yummy. We like artichokes added to most anything. When I make a spinach dip I use frozen chopped spinach. I agree with you about the salt in canned veggies, sometimes I rinse them off.
