Modified Caesar Salad

Happy Fourth of July to you all. I have become addicted to what I call modified Caesar salad. I got some fresh romaine lettuce and Spanish garlic at the farmer's market. I break the lettuce into large pieces and smash about three cloves of garlic. To that I add olive oil, a dash of white balsamic vinegar, anchovies chopped fine and shredded Parmesan cheese. I know most folks turn the nose up at anchovies but the saltiness is just wonderful in the salad and they don't taste like fish at all. Oh, it's so good.  I'm off to the sale today, it'll be real busy so I'll catch up to you later. Thanks for reading and for all your comments.

  1. That's a great sounding salad! Even if I'm reading this over my first cuppa in the morning, I do like the idea of the anchovie salty tang with all that garlic! Yum. Good luck on your sales today.

  2. Hope the sale goes well for you. That ceasar salad sounds good. I'd have to use lemon juice instead of vinegar but that would go well with the anchovies..

  3. Happy Fourth to you! I always liked Caesar salad, and it was years before I found out it actually had anchovies in it! When I read anchovy paste in the dressing, that wasn't as bad as ordering the salad in a fancy restaurant and when it arrived it was garnished with whole anchovies on top.. AAACK..it really was a turn off and I did not eat Caesar salad for a few years after that. I do eat it sometimes now, but still don't want to see them.

  4. Salad looks delicious. I'm not a big fan of anchovies either... but perhaps a little goes a long way.

  6. Salad looks delicious! I am okay with anchovies... I don't even mind if a restaurant puts them whole on top of a Caesar salad. Then again... I like sardines too!

    Hi Anna, thanks, you might like the white balsamic vinegar it's quite sweet and I only use a dash.
