Poblano and Yellow Brandywine Focaccia

This summer I've really been enjoying cooking new dishes with the fare I obtain from the Union County farmer's market. The other evening I made a Poblano and Yellow Brandywine Focaccia. The crust is a gluten free mix by Chebe I found at the grocery. To the batter I added one cup shredded cheese, (I used sharp cheddar),  two eggs slightly beaten, 2 tablespoons of oil and a quarter cup of milk. I mixed up the batter and kneaded it slightly with the back of a spoon. I spread the crust on an ungreased pizza baking pan.

I blistered and peeled the skins from two poblano peppers and chopped them up medium. I sliced two heirloom yellow brandywine tomatoes, chopped up one quarter red onion, placed them on top of the crust. Then I sprinkled the top with dried oregano, basil, black pepper and salt. I baked the focaccia in a preheated 375 F oven for 30 minutes. It was so delicious and it's quick and easy to make. Wonder what I'll find at the farmer's market today?   1. I love farmer's markets and wish I lived where they were year round. Ours will be coming to an end soon and I'll miss it. Your recipe sounds delicious!

    The only I time I had gluten free "bread" was on a sandwich I picked up at the airport. It was so bad that I couldn't eat it. Not surprising since it was at the airport. You seem to be able to find some good alternatives to make at home.

  5. Hi Michele, thanks, this mix and the one for pizza from red mill are both very good tasting, I read in Chebe site that they found the recipe while traveling in Brazil and decided to start offering it since it was gluten free.

  6. Just home from Tailgate market, with lots of squash, tomatoes and "Asparagus beans" which look like the Asian long beans I grew last year and liked so much...can't wait to try them. And silly me still had a squash from last week still in the fridge...ok, more squash recipes needed! Zucchini bread for sure! Can't wait to hear what you come up with from your shopping.

  7. Hi Barb, thanks, I saw on Pinterest that there are baked zucchini which looked good, also you can scoop out the inside and mix up with other ingredients and have stuffed zucchini. You can do a search on Pinterest for recipes too, check it out.

    Never had Asian long beans I'll bet they are good. Gary went to the market instead of me as I was under the weather with my back and he isn't as adventuresome as me.

  10. That sounds good. The GF bread sounds a bit like Against the Grain, using lots of cheese and eggs. They have good products (made in Brattleboro VT). I've played around and made some good rolls with cheese, eggs and tapioca (a form of the Brazilian rolls (Pão de queijo). I've never seen this brand but will be looking for it. Made an Udi's pizza piled high with leftover grilled veggies and fresh mozz the other night. Pretty yummy, even cooked on a pizza pan with holes despite what the box said-it was crispy! And tasty too!!

  11. Hi Jennie, thanks, I'll have to look for the Against the Grain. The red mill pizza dough is good and I've used it for my pizzas, I've had Udi but they cost so much I decided to try the red mill gluten free pizza dough and it makes two, so one can be kept in the fridge for another day or if you have company you can have enough for a crowd.
