Crustless Quiche

Luckily I made this quiche before I got ill and had it in the fridge and could warm it up to eat. I'm sitting up typing now since sometimes if I'm lying down I can't stop coughing. I am totally worn out from coughing so much. Soup and tea is about all I'm eating. Gary got me some store bought flan and some apricot mango juice both of which I love. No sign of Betty I fear she has gone to kitty heaven but it would be so nice to know for sure.

To make the crustless quiche, melt three tablespoons of butter and pour butter in bottom of 9 x 13 inch casserole dish. Chop fine 3 tablespoons of red onion, one teaspoon of fresh ginger.  Chop medium 3/4 cup mushrooms and half of a bell pepper (or six of the mini peppers). Saute the mushrooms and set aside, then saute the onion and ginger and then add in the bell peppers and saute them. Meanwhile sprinkle the bottom of the buttered casserole dish with shaved Parmesan cheese.

Beat six eggs and 2 cups of half and half. If you use an 8 x 8 pan decrease eggs by 2. Slowly pour half the liquid on top of cheese and butter trying not to displace the cheese. Then sprinkle in the onions, ginger, mushrooms and peppers into the liquid, Sprinkle in spices of thyme, tarragon, marjoram and a few dashes of cayenne pepper. Then pour in remaining liquid. Sprinkle in about 1/2 cup of crumbled goat cheese and top mixture with more shaved Parmesan cheese. Bake at 350 F for 50 to 60 minutes, Let cool before serving. The quiche comes out without sticking to the pan and is so delicious. You can serve this for breakfast, brunch, lunch, or even dinner. Thanks for reading and for all your comments.

    Crustless quiche is one of our fall back quick dinners with a little salad and a slice of homemade bread .
    Toes crossed that Betty has just gone on a toot and will be home soon.

  5. Musinex at high strength has been my saving grace (capsules, not liquid) for coughs. Just saying it worked for me. I love crustless quiche...the only kind I make these days...but I have to skip onions and peppers, so find using swiss cheese and mushrooms and spinach helps give me flavors I like. Thanks for posting. May Betty have a peaceful transition.

    I hope that you're feeling a lot better, if not completely better Linda...and I hope Betty has found her way back home again. :)

  11. Hearing about Betty is making me very sad. Had loads of cat problems last year. Pretty sure I know how you feel. Will still keep my fingers crossed that she finds her way home.

    What do you do with the underside of your slab plates?

    1. Hi Cazz, thanks about Betty, hope she is in cat heaven. What do you mean about the underside ? These were slumped over a glass plate form which curves up ever so slightly and when I glaze them I glaze only a small bit of the underside. I use an oxide pencil to sign my name on the reverse, let me know if you want to see the underside.

  12. Hope your cough gets better soon. My cousin in New Orleans just emailed me that she is suffering with a bad cough also. As for Betty, don't give up hope yet. Cats are pretty resilient. We had one female get lost when we moved and was gone for 3 months. She returned very thin and scraggly, but she rebounded well (never left the home again!).

Hi Rian, thanks, there are too many critters in the woods here, fox and bobcat and owls and hawks and Betty is just a bit of a thing without much meat on her bones and it's turned really cold so I don't hold out much hope especially since she was getting forgetful and acting strangely, I just hope she is in cat heaven now, would be best for her.
