Transport Winds & Salmon Patties

Yesterday morning I looked out the window to see some beautiful transport winds moving quickly across the sky. This first one looked like a man with a beard flying with his arms outstretched (the darker cloud in the center).

 Can you see the man with the beard in the dark cloud. If not what do you see?

 A few seconds later the clouds spread out looking like waves.

 Then the clouds blended even more as they flew by.

Have you ever had salmon patties? My mom used to make them so I thought I'd give them a try. Sometimes they're called salmon cakes but I've always known them as patties. It takes about half an hour to prepare and serve these and they're really delicious. I always keep canned salmon in my pantry because I like to make a cold salmon salad in the summer; I'll add salmon patties to my wintertime meal list. The asparagus spears were canned I prefer fresh, then frozen, over canned.

Drain one can of salmon well and put in a medium sized mixing bowl. Next add one beaten egg and some bread crumbs, sprinkle in some cardamom and red pepper flakes. No need to add salt, canned salmon already has salt added. Mix well and form into patties.

Melt butter and add some olive oil to a frying pan on medium high heat. When butter and oil mixture is hot (I sprinkle a couple of small drops of water in the oil and when it pops I know the oil is hot), gently place the patties in the frying pan. Turn over when brown on one side and turn down the heat and cover and cook till brown on the other side and cooked through. Serve immediately. One can of salmon made four generous sized patties.   1. That's how my mom used to make salmon patties. I use leftover baked salmon, and usually rice if I have it...and make thinner patties so they are just fried rather than having the thicker kind which look so nice. I'm glad I've got frozen salmon cause I might just have some today.

    1. Hi Barbara, thanks, I never have any leftover fresh salmon, lol. ha but when snowed in canned salmon is worth stocking in the pantry.

    1. Hi Joanne, thanks, I think my mom used to make tuna and peas in a cream sauce on toast but I can't remember exactly how she made it, must look into that.

  3. Yum, yum, 5 in the morning here and seeing those salmon patties .... well, I just might make some for breakfast today! The cloud photos are lovely, and the clouds are different to any I have seen here. Our nearest equivalent are when we have a Nor'Wester blowing, and we get wave after wave of clouds that pack together solidly, and make me feel like I am under water looking up to a stormy sea above!

    1. Hi Peter, thanks, there were higher clouds and these dark gray ones were below and blowing at a different speed than the upper ones, clouds are so mesmerizing to look at. I remember when I was a kid and would lie in the grass and look up and try to see what I could see in the clouds.

  4. You did a great job capturing the cloud formations.
    I was thinking about salmon patties the other day! My mother often made them on Friday during lent, since we couldn't eat meat. I hated them back then, but like them now. She rolled hers in crushed saltine crackers that were seasoned with pepper and paprika. Yours remind me of crab cakes... yum. I think I am going to have to buy some canned salmon.

    1. Hi Michele, thanks, the clouds did all the work, lol. My mom probably used saltines too come to think of it I remember they were crunchy. I have some canned crab in the cabinet too but Gary can't eat crab, more for me, lol.

    2. I made salmon cakes last night and we both loved them! I used panko bread crumbs, an egg, and sauteed onion and celery. I think we are going to add them to the rotation.

    1. Hi Dennis, thanks, there are those creamed potatoes and peas again I should have written down some of my mom's recipes but we had them so often I didn't think I'd ever want them again now that I am up there in years old seems new again, lol

  6. I, too, keep canned salmon on hand. They have wild salmon in cans at costco. I make a coconut milk based soup and throw in a can of the salmon with veggies and little fresh salmon. I too make salmon salad out of it, year round!

  7. Hi Jennie, thanks, oh the salmon soup sounds good, the canned salmon I get is also wild salmon. It goes on sale every so often and that's when I stock up.
