Smoked Salmon

This evening we had an antipasto dinner of pickled asparagus, marinated artichokes and smoked salmon. The asparagus and artichokes were obtained for twenty-five cents at an estate sale this week. We purchased the salmon in Florida and used the Anuka smoker we found for a song at an estate sale in Floirda. Gary brought all the ingredients to me on a bedside table so I could combine them to marinate the salmon.

We smoked the salmon for 30 minutes today; the day after marinating. The marinade consisted of a bit of (no measurements made, please sure your judgement) rice vinegar, white balsamic vinegar, sugar (brown or white), dried mustard, soy sauce, lemon juice, freshly chopped ginger, and ground pepper. This time we soaked the hickory chips in water overnight which encouraged more smoke instead of quick cooking. This antipasto dinner was so much better than a heavy meal in the late afternoon .   1. I have never used a smoker. How difficult are they to get right?

  2. Hi Sue, thanks, very easy. We got this smoker at a yard sale for $12 and it had never been used, the Anuka Smoker is made in England and used to be distributed in Florida but no longer is. Basically you soak fish in a brine and then smoke it with wood chips that have been soaked in water to get them to smoke more. I have also smoked chicken and other meats, I tried vegetables but didn't like them smoked. Many people build their own smokers in their back yards but I like the electric ones because they don't need any fire to smoke the items. I used to have a LIttle Chief smoker but it takes much longer to smoke in that one, if you can get the Anuka I highly recommend it. when I smoke chicken I smoke for about 20 minutes and then cook the rest of the time in the oven

  3. Looks good! I wonder if I could smoke it on m gas grill. I do cedar plank salmon out there at least once a week and the cedar imparts a nice flavor. I'd never thought about doing chicken, I'm going to have to give that a try!

  6. Well, look at you! Bedridden and still managing to fix a delicious repast. I would have left hubby to his own devices and he would have made scrambled eggs for dinner. And I would probably have had popcorn in bed. LOL My favorite combination for a meal is salmon and asparagus.

    1. Hi Barbara, thanks, you would have laughed at Gary bringing me the ingredients to add to the glass casserole dish to soak the salmon, but it turne dout so well. I have had popcorn in bed so many times, Ha.
