Scallops with Blueberry Sauce & Rainsticks

These scallops were absolutely fabulous. I purchased 8 scallops and sliced them lengthwise. then I dredged them in gluten free bread crumbs and set them aside.

Meanwhile I divided one cup of blueberries in half and crushed one half with the back of a spoon and set those aside. In butter I sauteed one tablespoon of fresh ginger, and one small shallot, added 2 tablespoons of white basalmic vinegar, one tablespoon of coriander, 2 tablespoons of cane sugar, 2 tablespoons of orange marmalade, one tablespoon of orange rind chopped fine, then I added the cup of blueberries (crushed and whole).

Once the sauce is warmed, saute the scallops in butter and olive oil in a hot pan till lightly browned on either side. Serve on a bed of greens with garnish of strawberries and cherry tomatoes and drizzle the blueberry sauce over the top.

In pottery class today we made rain sticks, pinch pots and vases. The completed rainstick I purchased years ago; the two above are some we made in class today. Can't wait to hear the sound from the rainsticks. Thanks for reading and for all your comments.

  1. Yummy scallop recipe. I've got a hankering for shrimp, so maybe indulge with some Thai sauces. Rainsticks sound like a great idea, pardon the pun. Can't wait till you can show how they sound...but they certainly look like they should sound lovely, like they look!

    1. Hi Barb, thanks, oh you wouldn't believe how delicious that sauce was; it could be put on shrimp, chicken, just about anything I think. They really do sound like falling rain but higher pitched but I suppose it depends upon the size of the clay balls placed inside, we shall see.

    1. Hi Sue, thanks, I will attempt once again to make a video with sound but it will be a while since the students aren't making work as fast as I do, so I won't be firing for a while.

  3. Linda.. the recipe sounds/looks great! The blueberry sauce..oh my! must try that. Rainsticks! I have never made one, nor do I have one, but love the sounds they make.   4. Hi Trish, thanks, that blueberry sauce is to die for and would be good on so many dishes or just on a salad, you won't be disappointed making it. I too love the sound of the rainsticks, I am not sure how these student ones will turn out as I understand the interior should have baffles in a helix but each piece of pottery is a learning experience so we shall see.

  5. your scallop dish sounds very tasty. What will you be using for baffles? The original form with cactus needles probably wouldn't work... what an interesting project..

  6. Hi Anna, thanks, we put some clay baffles on the interior and then sealed up the form, not sure what they will sound like since after we
    constructed them I read an article that says the baffles should be placed in a helix pattern down and around the length of the stick, we shall see; I am sure they will rattle but maybe not like I expect, but then next time I can change the technique. I also saw a you tube video of a woman that makes them low fire and uses nails piercing the stick as baffles, she low fires the stick bisque and then again and usually using oxide stains on the stick, sometimes she raku's them.

    1. Hi Lori, thanks, every time I see that photo I want more, lol. I put in a perennial garden with 4 inch pots and I have to water them every day till they get established but in the end it will be worth it.
