Homemade Cream of Mushroom Soup

Sometimes I don't know what's in my refrigerator because I don't look before I go shopping. That was the case today. Somehow I ended up with three packages of fresh mushrooms thinking I needed another package. Oh brother. I was going to give some to the neighbor but Gary said make mushroom soup. Since we don't have a penny to spare I did just that. I decided to make homemade cream of mushroom soup. I sliced a big bunch of the mushrooms and half a small onion.

I sauteed the onion and several cloves of garlic and set aside. Then I sauteed the sliced mushrooms in butter and set aside. I added the onion and mushrooms back into the sauce pan and added four cups of water, some chopped fresh thyme, fresh chopped Spanish tarragon, dried parsley, salt, ground pepper, a dash of cayenne pepper and cook it all for about one hour. Then I added half a teaspoon of nutmeg and 1/4 cup of sherry. Shortly thereafter I blended the mixture up in a blender and poured it all back in the pan. 

I added one cup of heavy cream mixed with 2 teaspoons of rice starch (gluten free recipe). Cook till thick and serve garnished with a couple of fresh sliced mushrooms. Oh so creamy and delicious. Folks will think you're a gourmet cook with this one. Ha. Thanks for reading and for all your comments.

    1. Hi Gigi, thanks, it was really divine and Gary remarked this morning that he liked the hint of sherry in the soup, get a good quality sherry not the cooking kind, worth the flavor.

  2. Gotta admit the picture doesn't look like anything but 3 mushrooms. But reading the recipe it does sound good.

    1. Hi Barbara, thanks, the soup is kind of pale brown so doesn't show up in the bowl but it's in there, probably should have put it in your bowl and it might have showed up better. It was really good though.

  3. Sounds delicious! YUM! I think that a lot of people are so used to what comes in a can that they have no idea of what the real thing tastes like.

    1. Hi Suzi, thanks, I have never made home made cream of mushroom soup but I am glad I did - it is completely different than the canned which I have used for years in various recipes but rarely eaten as a soup. Try this one you will be amazed at how good it is.

  5. Yummo. The smaller portion doesn't like mushrooms. All the more for me. No sherry here though. Like you, rather a lot of mushrooms. For similar reasons.

  6. Now that's one tasty soup! I love mushrooms! And I love mushroom soup...particularly home-made mushroom soup!! With some fresh, crusty bread on the side for slurping and dipping! :)

  7. Linda, I used to LOVE fresh mushroom soup. Now (along with some other items) I've had to eliminate mushrooms from my diet due to migraines. But I agree that it is wonderful. And I find a drop of sherry or white wine enhances many recipes!

  8. Hi Rian, thanks, I can't believe mushrooms give you migraines. Gary used to get them constantly and I had him eliminate (slowly wean himself off of ) cheese, chocolate, caffeine in the form of coca cola and excedrine and he never had another migraine again. Now he can occasionally have those items but in moderation.
