Cream of Fresh Tomato Soup

This time of year fresh tomatoes are abundant and inexpensive at the farmer's market. I decided to make cream of fresh tomato soup.

I used a combination of rutgers and mountain fresh. Pictured is the mountain fresh.

First I chopped one small red onion and some fresh garlic and sauteed that in some olive oil. Then I added the chopped tomatoes. I added salt, pepper, paprika, cayenne, oregano, fresh chopped Spanish tarragon and fresh chopped basil.

I cooked the tomato soup for about an hour. I let it cool a bit and then put it in the blender to smooth the texture.

I put the soup back in the pan and added about 3/4 of half and half cream and warmed the soup back up again. Boy fresh tomatoes make all the difference in flavor.

I am thankful for all the sales I made at the farmer's market yesterday. One couple bought a large free form bowl. The gentleman said "you do beautiful work; we normally don't purchase pottery but your's is so beautiful we just couldn't resist". That made my day. Thanks for reading and for all your comments.

  1. Soup sounds yummy. Tomatoes have been scarce here due to a lot rain in the spring and then no rain and extreme heat.
Glad to hear your sales at the farmers market are going well.

  2. I love that your work tempted that couple.
Tomato soup was what my mother made for us when we were unwell. I love it, but can ONLY eat it when I am feeling poorly. Old habits die hard.

  4. I'm not usually a fan of tomato soup, but this looks delicious. We didn't do a garden this due to caterpillar infestation. Fortunately we have a wonderful farm nearby!

What a compliment to make a sale like yours!

    1. Hi Suzi, thanks, this soup doesn't taste anything like a canned tomato soup which is the only kind I have previously been familiar with. Don't compliments make all the difference?
