Quick Homemade Pickles

I asked Gary to get me a cucumber at the farmer's market. He came back with a bag of pickling cucumbers. I decided to make quick homemade pickles. Slice the pickling cucumbers thin, about twelve small cucumbers. Place sliced cucumbers in a colander and sprinkle with salt and stir and let stand while making the pickling mixture. Chop two garlic cloves fine, chop one quarter of an onion fine, and chop one fresh Fresno chili fine. I happened to have a Fresno chili from my garden.

Meanwhile heat 1/4 cup of cider vinegar, 1/2 cup of white vinegar, 1/8 cup of brown sugar, 1/2 cup of white sugar, and one teaspoon of mustard seed, one teaspoon of coriander seed, one teaspoon of dill, 1/4 teaspoon of allspice, and 1 teaspoon of salt. Boil for about 15 minutes and then pour over pickles slices. Let cool to room temperature, then refrigerate. I think the brown sugar makes the water a little cloudy but it doesn't affect the taste.

I ate these like a salad they are so tasty. Best pickles I've ever tasted. Give this recipe a try.

The farmer's market was packed yesterday and I had lots of sales. Many sales were from out of town such as Mobile and Key Largo. Another woman who bought a driftwood vessel three years ago came by to say how much she likes it. Gary read an article saying jewelry in boxes sells quicker. I'm here to attest that is true.
