Harvested Shallots

We're expecting rain every day for over a week. I thought my shallots would rot if left in the ground even though they're planted in a bin. So today I harvested the shallots early. I checked the date when I planted them and it was the middle of May. Supposedly they take 90 days to mature, so I guess it's not overly early. I've left a few in the ground to see how they fare with a week or two more growing time.

I was planning to sell these at the farmer's market but I think I'll keep them for myself. They don't seem to have that papery coating on the exterior so I'm not sure how long they'll keep. I plan to make a French shallot soup; similar to a French onion soup only with shallots. We shall see how that turns out. Stay tuned. Thanks for reading and for all your comments.
