Spicy Fall Candy Roaster Soup

Perhaps you recall the North Georgia Candy Roaster squash I introduced you to a couple of years back. It's a huge long sweet fall squash great for cooking in a variety of ways including Spicy Fall Candy Roaster Soup.

Legend has it the North Georgia candy roaster squash makes better pumpkin pies than a pumpkin due to it's sweet mild flavor. The seeds of this heirloom variety of squash are said to have been provided by the Native Americans. In addition, this squash is easier to cut and clean than a pumpkin.

After I cut the squash lengthwise and removed the seeds (reserving them for planting next year) I then cut the squash into one inch squares and steamed them in two cups of water till tender.

I added one teaspoon of cinnamon, 1/2 teaspoon of dried ground cloves, nutmeg, and ginger, and a dash of smoky paprika and cayenne, and two tablespoons of brown sugar and cooked till soft. The skin is very thin so I left it on. Then I pureed the squash soup and it was ready to serve. The lingering heat from the ginger and other spices will warm you with goodness. The squash made so much that i was able to give my neighbor a pot of soup and still have a huge potful for us. Thanks for reading and for all your comments.
