Exotic Mushrooms

At the farmers market this past weekend I was pleasantly surprised to see fresh exotic mushrooms available. Fresh shiitake, lion's mane, and oyster mushrooms. I am familiar with shiitake and oyster mushrooms but have never seen lions mane (center).
Today I made scallops with the shiitake mushrooms. Still thinking of how I'll use the other two varieties of mushrooms. Any suggestions? Thanks for reading and for all your suggestions.

    I don't think we get lion's mane so I am clueless. I adore mushrooms though.

  5. I used to love mushrooms, especially fresh mushroom soup... until one day eating raw mushrooms gave me an immediate severe migraine. So unfortunately I never ate them again. But it's great that you can enjoy them.
