Greek Lemon Roasted Potatoes

These Greek Lemon Roasted Potatoes are definitely worth making. Preheat oven to 350 F. Par boil 4 to 5 medium potatoes cut into wedges for 15 minutes in salted water. When potatoes are just soft immerse in an iced water bath to stop cooking. Drain well. If you don't want to parboil the potatoes, just bake potatoes (see below) another 15 minutes before turning up the heat.

While potatoes are cooking zest one lemon and then juice the lemon. Mince 3 large garlic cloves. Add lemon zest, juice, and garlic to 2 tablespoons melted butter. and start with 1 tablespoon of olive oil. Set aside. Sprinkle potatoes with 1 teaspoon of oregano and salt and pepper, then toss to coat potatoes with lemon, garlic, butter, olive oil mixture. If you need more olive oil to coat all the potatoes add a bit more.

Place potatoes on a rimmed baking sheet and bake for 30 minutes (or bake for 45 min if not parboiling), turning once. Turn up the heat to 450 F and cook another 15 minutes till golden brown. These potatoes pair nicely with any protein, seafood, lamb, turkey, chicken, etc. Or serve with some tzatziki. Thanks for reading and for all your comments.
