Happy Valentines Day and Marinated Roasted Portobello Mushrooms

Happy Valentines Day

Here's a quick and easy portobello mushroom recipe. For marinade use 1/2 cup cooking wine (I used Marsala wine because that's what I had), 2 tablespoons soy sauce, 2 tablespoons balsamic vinegar, 1 tablespoon olive oil, and 2 minced garlic cloves. Marinate room temperature portobello mushrooms cap side down for at least 15 minutes in a non reactive baking dish. I took a teaspoon and spooned some of the marinade over the mushroom center and edges occasionally and poured the excess from the center back into the dish.
Preheat your oven to 400 F.  Bake covered for 25 minutes, then turn mushroom caps over and bake another 8 to 10 minutes. Serve plain or sprinkle a little parmesan cheese over the top. Be careful mushrooms can be extremely hot. Bread could be dipped in some of the marinade. Mushrooms could also be placed over rice, millet, or quinoa.     1. Hi Rian, thanks, I am surprised that mushrooms cause migraines, dh stopped drinking coke and chocolate and has taking excedrin and hasn't had any migraines since, but can now eat chocolate occasionally.
