Spicy Vegetable Medley


Eating something hot and spicy on a hot day makes you cool off; please try it. Peel and chop one shallot and a two inch cube of peeled fresh ginger. Saute those two ingredients in a pat of butter in a large frying pan. Meanwhile chop up some fresh tomato in small pieces, about one cup full of a medium firm type. Add the tomato to the pan. Leave the skins on and chop one medium zucchini and one medium crookneck squash in small bite size pieces. Add those to the pan and stir well. Add a few shakes of some Jamaican hot sauce. Grind in a little fresh pepper, cover and let steam on medium low heat till squash is soft but still firm. Stir occasionally to blend the flavors.


This is so quick and easy to make and very tasty too. There's something about that Jamaican hot sauce and the ginger together that really makes my taste buds come alive. It takes about 15 minutes to cook. You'll make it over and over again. Oh, this Spicy Vegetable Medley was so good I forgot to take a photo when it was ready to eat. The dish looked more blended than the top photo in the pan. I've made it twice since. Thanks for reading and for all your comments.

  4. Hi Lori, thanks, you know that would be a great idea for a marketing venue, recipes and pots handmade by me, if only I was younger and had all that energy and positive thinking I had back then. I researched writing a book about my travels and the cost was so expensive, if I was Steven King, Dean Koontz, Jackie Collins, or Daniele Steele or some such I might make a couple of bucks, but I think writing is a very long process of over a year for even one book, and I am not sure I want to devote that amount of time to a project like that.

  8. That looks so good. You are right about eating something spicy hot when it's hot outside. My mother, who is Japanese, says the same thing! So I guess people around the world clue into that. Now I am going to try your medley even though it isn't hot outside!

    Hi Patti, thanks, the Jamaica hot sauce comes in the same shape bottle has tabasco, but it isn't as hot and has more flavor. just add a drop or two to try it, it's the type of heat that doesn't stay with you too long so you won't be burning your mouth with it.

    Hi Charlene, thanks, it is so good you'll love it. I think soups before a mean must stem from this concept. I always get the hiccups with hot and sour soup, but the other day we had onion and mushroom soup at a Japanese restaurant which was delicious. I think lots of cultures probably have the same idea, in Mexico when I traveled there they did the same thing, making it hotter and hotter; and then there's Thai hot which I think is the hottest type of food there is, too hot for me. I have to ask them to tone it down for me to eat.
