Wahoo with Cilantro Pesto + Basket

This time I made wahoo with a cilantro pesto added after cooking. I started out sauteing some fresh chopped ginger and a small sweet onion in some butter and olive oil. Meanwhile I sprinkled the wahoo fillets with some ground cumin and then added them to the pan when the onions were translucent.

While the fillets were browning I chopped some fresh cilantro very fine and put it in my marble mortar along with a teaspoon of garlic and olive oil. I ground them all up together and when they were pulverized I squeezed half a lime into the mixture and stirred it up.

When the wahoo was cooked through I placed it on the plate and added the cilantro pesto over the top. I served it with some asparagus and some fresh tomatoes from the garden. I'll make cilantro pesto again, it was delicious on the wahoo which was also good.

Here's a strip stacked basket I made today. I split the handle and put part on the outside and part on the inside. I think the handle attachments could have been larger and more substantial.Or I could have made a button on each side as if a brad or screw were holding the handle to the basket. Too late to change it now. As one of my classmates used to say, "it is, what it is".

  4. You seem to like cilantro a lot. I read once that about half of the population dislike the taste because it tastes soapy to them. I'm one of them, so I avoid anything with cilantro. I like basil however, so I wonder if it wouldn't be just as good with basil.

    Must have done something wrong in sending, but strange the message took so long to return.

  11. Hi Mark, thanks, the bulge was made by the clay speaking. I recently heard a quote by Shigetosi Nagazato saying pots are one third clay speaking, one third the firing speaking, and one third the artist speaking and if you expect to change the percentages get another career.
