Too Many Tomatoes? Make Soup

If you have too many tomatoes, make soup. Pictured is a cup of soup in Black Mountain Barb's seahorse cup. It's the perfect size for a cup of soup.

My tomato plants are producing lots of tomatoes. the Juliet tomatoes on the right should be picked every day.

I chopped a big bunch of tomatoes into medium sized chunks and whirled them in my blender till smooth. I filled the blender half full and whirled them in batches. I didn't bother peeling the tomatoes. The skins aren't tough and seem to disappear after blending.

I also chopped one cucumber (peeled). Next time I'll only use half a cucumber, the cucumber was a tad overpowering in flavor. Meanwhile I sauteed one shallot and several garlic cloves which I chopped fine. I added the pureed tomatoes and cucumber to the pot. I added some fresh herbs from the garden, basil, marjoram, thyme, Spanish tarragon and sage. I added a tablespoon of golden balsamic vinegar and a tablespoon of sugar and cooked about an hour.

At the very end I added a cup of half and half cream and put the mixture back into the blender and blended it up again. This soup is delicious hot or cold. Thanks for reading and for all your comments.

  5. Just read in the local paper from the food gal you can also freeze them, just blanch them slightly and then into cold water, I will see if I can find it for you~~~~
