Black Bean Medley

Homemade food tastes so much better in homemade pottery. Here's a Jeff Brown wood fired bowl filled with my black bean medley.

 
I usually soak beans over night but this time I forgot. You can make black beans more quickly by putting two cups of the dried beans in a pot with eight cups of water and bringing them to a boil. Then let them sit for one hour. Meanwhile chop a red onion fine and smash four cloves of garlic and saute them separately. Add those to the bean mixture when it is finished soaking.

Add 2 tablespoons of cider vinegar, 1 teaspoon of cumin, 1/2 teaspoon of powdered bay leaves, 1/2 teaspoon of cayenne pepper, 1/8 teaspoon of chipotle pepper, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Cook till beans are soft but not mushy. Add one cup of frozen corn, 1/2 can of tomato paste and 1/2 half cup of brown rice, cook till rice is tender adding additional water so ingredients don't stick to the bottom of the pot.

When the rice is cooked through add four mandarin oranges chopped medium and a bunch of cilantro each chopped fine. Lastly add 2 tablespoons of lime juice. Don't underestimate the lime juice since it really enhances the flavor of the dish. Thanks for reading and for all your comments.
