Citrus Black Beans

These citrus black beans don't look that appetizing in the pot, but they are really delicious. Soak a bag of the black beans over night and allow a good long while to cook them. I had to cook them for two days because I got tired of stirring the pot. I must remember to cook them in the crockpot next time. I cooked the beans in water for some time before adding the ingredients below.

I used one can of crushed tomatoes, one can of tomato paste, one can of mandarin oranges, (or three of four fresh mandarins in sections), an onion chopped and two garlic cloves crushed, allspice, cumin, salt, pepper, chili pepper paste, one cup of frozen yellow corn kernels, (or one fresh corn on the cob kernels removed), two tablespoons of rice vinegar, and 3/4 cup of orange juice. The orange juice really enhances the taste of these beans. Watch these closely as the mixture is quite thick and can settle down and burn easily if not stirred.   6. I love beans, especially creole red beans, but do like black beans too... although I haven't tried to cook them (usually get them at Mexican restaurants).I also like lentils - and they too (the black ones) don't look too appetizing, but do taste great.

  7. Hi Rian, thanks, recently at the grocery store I was checking to see which beans had the most vitamins or nutrients and decided I will start using them instead of others; black beans were some of the best.
