Spicy Dried (Dehydrated) Okra

Guess what I made? Spicy Dried Okra!

Here they are before dehydrating. Okra is really good for you. Besides dietary fiber they contain tons of vitamins and minerals. Click the link to read all about their nutritional benefits.

 Slice the okra lengthwise leaving the tips and stems on.

 Toss with light amount of olive oil to get the spices to adhere to the okra.

Sprinkle in your favorite spices. I used a small amount of cayenne pepper, paprika, salt, and pepper. Place them open side up and dry for approximately 6 hours, depending upon the thickness of your okra. You can use the larger okra for drying as long as they are still pliable.   1. My old aunts used to thread green beans onto string and just hang them on the porch to dry. That's just an anecdote, not a recommendation since neither of them could cook worth a darn.

  2. Hi Dennis, thanks, I've heard of drying peppers that way but not beans, it might work if in the sun, but with humidity they might get moldy. Ha.

  6. It's ages since I've had okra. I think the last time I had it would've been around 96/97. I don't see it often here where I live nowadays.

  7. Hi Lee, thanks, have you ever seen it growing, it has a beautiful flower and love the heat, it is plentiful here in the south so I am glad I know of other ways to utilize it.
