The other day I made cod fillets and decided to make a bearnaise sauce. I've made bearnaise sauce many, many times, so I decided to ad lib the ingredients. Ad lib sometimes leads to not so palatable results. I added whole eggs instead of egg yolks. What could I do to correct my mistake? The ingredients are expensive, so, rather than start over, I decided to see what happened. I made whole egg bearnaise sauce and it turned out just fine. Who knew? Photo was taken when we were traveling in our motorhome years ago, hence the paper plate.
I am glad that it worked for you. Some of my momentary lapses have been abject failures.
