add salt to your water, bring water to boil,
add rice then cover and turn down heat.

For the sauce, chop one shallot fine, saute in olive oil
then add 2-4 tablespoons of capers drained
when capers are slightly crunchy add 1/2 cup white wine
cook down then add in juice from two lemons;
when cooked down add two tablespoons of butter.
Last salt and papper your snapper, t
hen cook snapper fillets till brown on one side
then flip and brown on the other.
Don't overcook the snapper, a fork inserted
and twisted will tell you if the flesh is cooked.
Place a scoop of cooked rice topped with the snapper
then the lemon caper sauce drizzled over the top.
Oh so delicious yet easy to make.
Capers are often too salty for me. Hooray for quick and delicious dishes though.
