Oyster & Shitake Mushroom Pasta

Oyster & Shitake Mushroom Pasta

Render some cubes of pancetta in a bit of butter.
Add torn oyster mushrooms and sliced shitake mushroom caps
with a bit more butter and sauté till softened.
Shitake stems are tough; remove and dry for use in stocks and soups.
 I just put them in a bowl in the cabinet and let them dry naturally.

Add cooked al dente spaghetti with salt and fresh cracked pepper.

Serve immediately. Simple and delicious!
