Honey Lime Shrimp over Brown Rice
Start cooking your rice which takes about 30 minutes.
Chop one shallot fine and sauté in butter
Add one inch of peeled and micro planed fresh ginger,
next add one garlic clove micro planed.
Add two pounds of shrimp peeled and deveined.
Sauté till just barely done, about 3 minutes.
Add juice and zest of one lime, two tablespoons of honey,
two tablespoons of sweet chili sauce, salt & pepper to taste.
Just before serving add 1/4 cup chopped fresh cilantro.
The sauce could have used a thickening agent, (next time),
but it was delicious none the less and quick to make.
