Frittata

 
Frittata

4 eggs
1/2 cup milk
1 shallot chopped fine
6 mini peppers chopped fine
1 carrot chopped fine
1 clove garlic chopped fine
1 tsp herb of your choice
salt & pepper to taste

Oil your cast iron pan and preheat oven to 350 F.
Sauté your shallot, then peppers, then garlic and spices.
Pre-steam your carrots till soft then add to pan.
Beat your eggs, add milk, and add to pan. 
Let firm on edges then put in oven for about 10 minutes.
You don't want to overcook a frittata or it will be dry.
When edges start to brown and it starts to rise it's ready.

  1. I often make frittata but cook mine on the stove top and under the grill.
