3 cups fresh lady peas
6 slices of bacon cut into small pieces
1 yellow onion chopped fine
2 poblano peppers seeded and diced fine
1 jalapeno pepper seeded and diced fine
1 tsp fresh or dried thyme
1 tsp fresh or dried oregano
salt and black pepper to taste
3-4 cups of water
Lady peas are the smallest and sweetest of field peas with a cream color and no eye. I got the lady peas at 7M Farms. The first photo are some lady peas I made a few years ago with tomatoes. For today's recipe I didn't add tomatoes. I forgot a photo for today's recipe because they were so good we ate them too quickly. Cut bacon into small pieces, separate, and put into a stock pot. I use a kitchen shears to cut the bacon, this makes it quick and easy. Render bacon till almost cooked but not crispy. Add onion and cook till translucent stirring pot to get drippings to release from the pan. Next add the diced peppers and cook till somewhat soft. Last add the lady peas, water, seasoning, and herbs. Cook for 45-60 minutes till lady peas are soft. Again the peppers were not hot.
