Quinoa Tabbouleh Salad
1/2 cup quinoa cooked makes about 2/3 cup (usually bulgur wheat is used)
4 firm Roma tomatoes chopped, I used my cherry tomatoes chopped
1 English cucumber finely chopped (didn't have so omitted)
1-1/2 cups of parsley finely chopped
2/3 cup freshly chopped mint leaves
4 scallions finely chopped
1 shallot finely chopped
2 tablespoons olive oil
2 tablespoons of lime juice (or lemon)
salt and pepper to taste
Tomatoes, parsley, and mint are all fresh from my garden. Mix all ingredients and there you have tabbouleh salad. Probably could have made one cup of quinoa rather than half a cup.
