Potato Latkes or Potato Pancakes


Potato Latkes or Potato Pancakes

The first ones we tried I put yogurt and chives on.
Usually sour cream would be used but I had none.


For the second pancakes we used orange syrup.
These are better savory and not sweet.


For the batter grate 3-4 medium yellow potatoes.
Wrap grated potatoes in a cotton tea towel to absorb excess moisture.
Beat two eggs till light and frothy,
add 2-3 tablespoons of gf flour, salt, pepper, and smoked paprika.
Stir till just blended and set aside.


Meanwhile heat 1/4 inch of peanut or avocado oil till hot.
Drop potato mixture by a heaping tablespoon and flatten to 1/2 inch.
Cook on one side till brown, then flip to the other side.
Drain on paper towels while cooking other pancakes.
These were a little dense, next time I'll beat the eggs till frothy.
Sometimes gf flour can be dense in recipes.
Still they were good and hearty for a quick breakfast.
