GF Almond Butter Cookies

 
GF Almond Butter Cookies

1-1/4 cups gf flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon fine sea salt
1 cup almond butter
3/4 cup real maple syrup (it's a bit expensive)
1 teaspoon vanilla
1 egg room temperature

Preheat oven to 350 F. Mix dry ingredients together. In a separate bowl beat egg, then add almond butter, syrup and vanilla. (wonder if sorghum syrup would work) Add wet ingredients to dry and mix till just blended. Drop by small scoop onto cookie sheet, should be about one inch balls. Press down center with a fork. Bake for 8-10 minutes till slightly browned on edges. Let cool on pan for 5 minutes. Then transfer cookies to a rack and let them cool.

I made the mistake of using parchment paper on my good cookie sheet. When I took the batch out the oven the parchment paper slid off the pan onto the oven door. Didn't want the cat to jump on the oven door so yelled for Gary to come and stand guard while I got the cookies off the door. So the first batch was a little too brown. Gary didn't mind at all, said he likes cookies with burnt bottoms. These cookies are very moist so if you like crisp cookies this recipe is probably not for you. I also forgot to press the cookies down with a fork. Next time.
