Leek and Tater Soup

Leek and Tater Soup


Leeks are blanched, so wash well, as they sometimes have dirt in stems.
Chop pale portion of leeks into small sizes.
Sauté leeks in a bit of olive oil.
When soft add thyme, a dash of red pepper flakes, salt and pepper,
 6 cups of water, or stock,
Add 4 medium sized chopped potatoes.
Cook till mixture is soft and puree if you so desire.
A nice soup to have on a rainy day.
