Mahi Mahi Steak
Mahi Mahi Steak refers to how the fish is cut.
Instead of the fish being filleted it is cut across the body. This makes for a thick piece of fish with skin surrounding it.
That way the fish stays together nicely.
I patted the fish steaks dry squeezed some lemon on them.
Next I made a dry rub of coriander, paprika, garlic powder,
parsley flakes, salt and pepper and patted both sides of the fish.
Then I got my frying pan really hot and fried the fish on both sides.
These steaks were extra thick so after browning
I left them in the pan covered to be sure the interior was done.
They were quite delicious and the meat was flaky.
