Roasted Fennel, Apples & Pears
- 1 fennel bulb cut into thin wedges and separated
2 crisp apples peeled cut into 8 wedges each and halved
1 tablespoon lemon juice to keep apples from browning
2 firm pears cut into 8 wedges each - 2 small shallots cut into quarters and sections separated
- 1 teaspoon dried thyme
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon allspice, sprinkle over the top after tossing ingredients
1/8 cup of olive oil
Cut all up then toss in olive oil and spices except allspice. Sprinkle that over the top before roasting. Roast in preheated oven of 425 F for 30 minutes or less till browned and tender. After removing from oven sprinkle tops with a few reserved fennel fronds.
