Spanish Style Eggplant Tortilla - Failure

2 eggplant, peeled and grated
1/2 onion chopped fine or 2 shallots chopped fine
1/2 red bell pepper chopped fine
3-4 tbs gluten free flour (more or less depending on moisture)
2 large eggs or 1 goose egg
grated cheese such as parmesan or asiago @ 1/2 cup
olive oil to sauté
salt and pepper to taste

Peel eggplant and cut into quarters and grate. Salt eggplant and toss to get all eggplant coated with salt. Set aside to render excess moisture out of eggplant. Drain eggplant squeezing out excess moisture. Discard excess moisture. Add eggs to eggplant and mix well. Next add flour and incorporate into the eggplant mixture. Set aside. If using gluten free flour let mixture sit for half an hour. In medium frying pan brush bottom with oil and sauté onion (or shallot), then add peppers and sauté all for 10 minutes. Set onions and peppers aside. I cleaned the pan to prevent sticking with the next step.

Oil frying pan again on both bottom and sides. Place half eggplant mixture in bottom of pan and spread with back of spoon to coat the whole bottom of pan. Using the back of a wooden spoon works well to spread these ingredients. Next add onion and pepper mixture on top of eggplant for next layer. For next layer add cheese. Finally add remaining eggplant over the top being careful not to disturb other layers. Form mixture into a flat pancake making sure sides are also covered with eggplant mixture. Turn heat on medium and cook for 15 minutes covered.

Oil a plate large enough to flip tortilla onto it. Flip tortilla over onto the plate. Meanwhile brush a bit more oil into frying pan, then slide tortilla, uncooked side down, back into the frying pan. Cook for another 10 minutes to brown underside. Cut tortilla gingerly since it is on the softer side. Serve with a dollop of sour cream or Greek yogurt on top. I found this recipe accidentally on youtube. Couldn't load it with the video loading tool -  https://www.youtube.com/watch?v=CpAIXFw-ZAE   As you can see the flipping didn't work, it stuck to the bottom of the pan. Best to use a non stick frying pan which I don't have. Next time.
