Watercress Salad


Watercress Salad

Watercress leaves removed from stems.
Slices of romaine hearts to stretch the watercress.
Toss with truffle oil, vinegar, salt and pepper.
Top with sautéed shitake, oyster, baby bella mushrooms,
and almost soft boiled egg slices and a few cherry tomatoes.
(Cherry tomato skins were hard as a rock, but organic).
Lastly top with some deep fried crunchy shallot slices.
Serve immediately.
