Chicken Verde


Chicken Verde

4 boneless skinless chicken thighs
1 jar of salsa verde from Latino section of grocery store
salt and pepper to taste
1 cup brown rice

I made this before but worth making again. Cut each chicken thigh into thirds. Place in a 9x9 inch baking dish. Salt and pepper the thighs. Next pour the salsa over the chicken and bake at 350 F for 40 minutes. Meanwhile cook one cup of brown rice in two cups of water for 20 minutes. Serve chicken over rice spooning some of the salsa verde over the thighs and rice. So quick and easy. Serves four.
