Shishito Ratatouille
Chop up your vegetables, I've shishito, eggplant, and tomatoes.
Using a little olive oil, start with the peppers and eggplant.
When those are softened, add the chopped tomatoes.
Add some spices, salt and pepper and cook till soft.
There you have it, ratatouille.
Quick and easy and so fresh and delicious.
