Stuffed Poblano Peppers


Stuffed Poblano Peppers 

6 poblano peppers blistered, skinned, and opened
1 zucchini chopped fine
7 mini peppers chopped fine
1/4 yellow onion chopped fine
12 or so cherry tomatoes chopped in half
dash of olive oil to sauté vegetables
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/2 teaspoon basil
salt and pepper to taste
queso cheese crumbled over the stuffed poblano peppers
I drizzled a bit of pesto I had over the stuffed peppers before the cheese

Place poblano peppers on a parchment lined sheet pan and bake in a 400 F oven till skin is blistered. Turn peppers occasionally with tongs to get both sides blistered. Put peppers in a bowl covered with plastic wrap and let steam to loosen tough outer skin. Peel skin from poblano peppers and open pepper with a single slice on one side to open pepper to stuff.

Meanwhile sauté onion till soft, then add peppers, then zucchini, then tomatoes. Add spices and seasoning and cook till blended. Set aside to rest. I added the tomatoes last but they aren't pictured.

Generously stuff peppers with vegetables and then top with queso cheese crumbled over the top of the stuffed peppers. I did pour a little leftover pesto sauce under the cheese too. They were mighty good.

  1. Your recipes & food prep always look so yummy! Rabbit Rabbit! I always think of you on White rabbit day. Hope you and Gary are doing well. We've been back in Idaho for 3 years next month. My garden crops this year are raspberries, strawberries, arugula & lemon cucumbers.

    1. Hi Barbara, we are both doing fairly well. Hope the same for you both, forgot to post about the rabbit today. I grew those lemon cucumbers one year with two plants and had so many and tried to sell them at the farmers market and no one wanted any, lol. We were inundated with blueberries again this year and we are getting a few raspberries, hey are only two years old. We get some cherry size tomatoes sporadically, cause they are the only ones that will ripen here due to lack of sun. We have some peppers, mostly shishitos, We have had the summer of rain this year but we haven't had to water.
