I finally discovered how to improve my GF zucchini bread.
First of all wrap the grated zucchini in an all cotton tea towel,
and pat the grated zucchini to remove excess moisture.
Also after mixing batter, let it sit for 30 minutes
before baking. This allows the flours to hydrate.
Gluten free flours need that time to absorb moisture.
