Bay Scallops over Risotto


Take your time cooking the Arborio rice
Toast the rice till slightly brown,
then add 1/4 cup white wine.
When wine has cooked off, only add hot water or hot stock.
Do not add any liquid which is not hot.
This is one of the secretes to making a creamy risotto.
This will take time, stir frequently to prevent any burning.
Only add hot liquid one cup at a time.
Taste rice to determine if if is cooked through.
Set rice aside covered to keep warm.

Pat your scallops dry to ensure a nice browning.
Add scallops to a pan with butter and a bit of oil.
If you prefer use clarified butter to sear the scallops.
Do not overcook the scallops otherwise they become rubbery.
Serve immediately over risotto and sprinkle with fresh chopped parsley.
