Moo Shu Pork


Moo Shu Pork

Pork and marinade:

1 pound pork tenderloin
2 teaspoons gf soy sauce
2 teaspoons rice wine vinegar
2 teaspoons cornstarch
1 teaspoon sesame oil
1 slice ginger minced
1 garlic clove minced


Eggs:

3 eggs beaten
 2 teaspoons rice wine vinegar
1/2 teaspoons salt
2 tablespoons oil

Sauce:
4 tablespoons oil
2 scallions chopped
mushrooms of choice sliced lengthwise, sautéed separately
1 cup bean sprouts
4 teaspoons rice wine vinegar
4 teaspoons gf soy sauce
2 tablespoons oyster sauce
1 tablespoon minced ginger
3 garlic cloves minced
4 tablespoons water
salt to taste

Freeze meat for one hour then slice very thin. Add marinade ingredients and marinate for one hour. Mix egg mixture and cook, covered till just barely done. Slice eggs into thin slices. Stir fry meat add all ingredients and stir fry for two minutes. I didn't make the pancakes, next time.


Serve with  hoisin dipping sauce. The hoisin sauce would be spread on the pancakes or used for dipping the pancakes into the sauce. Making the pancakes is another project for the future. This was very flavorful.
