Pork Loin Country Style Braised Ribs

2-3 pounds boneless pork loin
1 cup apple cider vinegar
1/2 cup catsup
1 small can tomato paste
1/4 cup Worcestershire sauce
4 tablespoons brown sugar
2 tablespoons honey
1/2 cup spicy mustard
2 garlic cloves sliced thin
1 teaspoon paprika
1/2 teaspoon black pepper
1 teaspoon kosher salt

This is basically a southern style braised rib. Cut ribs in half and set aside. Add remaining ingredients to stove top casserole and bring to a boil. Turn down to low, add ribs, cover, and cook low and slow for 2 hours till meat is falling apart. With all the apple cider vinegar this dish tastes like it is from the south. It was delicious. This can also be cooked in the oven at 275 F. Serve over mashed potatoes, grits or polenta.
