Soft Scrambled Eggs with Ricotta
2 eggs
1-1/2 tablespoon butter
1/4 cup milk or cream
1/4 cup ricotta cheese
salt, pepper, and thyme to taste
In a regular frying pan melt the butter on low . Beat eggs with a fork and add milk to eggs. Add egg mixture to frying pan keeping on low heat. Add your spices. Have a rubber spatula ready when eggs start to form a crust around edge of pan, start to scrape the eggs to the center of the pan making sure to get the sides and bottom of pan. Cook eggs till just barely cooked. Add a few dollops of cheese and serve immediately.
It is years since I have had scrambled eggs.
