
Cherry Tomato Sauce over Chicken
2 pints of vine ripened cherry tomatoes, cut in quarters
1 zucchini cut into small pieces
1 onion chopped fine
3 garlic cloves chopped fine
2 tablespoons fresh oregano, chopped fine
1 teaspoon ground thyme
1 teaspoon chipotle powder
1/2 teaspoon cayenne powder
olive oil to sauté
1/4 cup heavy cream
salt and pepper to taste
1 zucchini cut into small pieces

olive oil to sauté
1/4 cup heavy cream
salt and pepper to taste
Sauté vegetables, tomatoes, onion, and garlic. Add herbs and spices. Cook for 2 hours to break down tomatoes and zucchini. Cool sauce to chunky smooth. Add cream and reheat.Serve chicken and sauce over rice. We have another pint of tomatoes to deal with.
