Ground Turkey Pasta with Tomatoes


Ground Turkey Pasta with Tomatoes

1 1/4 pounds of ground turkey
1 yellow onion, chopped fine
3 cloves garlic minced
8 oz button or cremini mushrooms halves
8 oz of gf pasta of your choice
1 small can stewed tomatoes, crushed
1 teaspoon fresh thyme, chopped
1 teaspoon fresh sage leaves, chopped
cheese of your choice grated or sliced
salt and pepper to taste

Sauté onion, then garlic, then mushrooms, then add turkey and cook till just done. Add crushed tomatoes and herbs. Cook pasta till al dente, drain, reserving 1 cup of pasta cooking water. Add cooked pasta to ingredients and add some pasta water if mixture is too dry. Place in a oiled 9 x 12 baking dish Sprinkle cheese over top and bake at 350 F for 20-30 minutes. Let cook for 10 minutes and serve. This casserole is so delicious.
