Skordalia, Garlic Lemon Mashed Potatoes
Greek potatoes mash.
roast 3 heads of garlic drizzled with olive oil,
and wrapped in aluminum foil
at 400 F for 60 minutes
peel and cook 6 medium red potatoes cut up till soft
drain potatoes, then mash

Add juice of one lemon, mashed garlic cloves and olive oil
salt and pepper to taste.

Truth is I could barely taste the garlic
Apparently roasting takes away most of the bitterness.
