Red Lentil Curry


 For this recipe I adapted it to use the cherry tomatoes, tomatillos, and shishitos I had on hand from the garden. I didn't add any heat but the shishitos must have had some heat. I served mine over rice. It was very delicious. Photo has link from which site I borrowed it from.

1 cup red lentils
1 onion chopped fine
1 tablespoon oil to sauté onion and spices
1 inch fresh ginger micro minced
2 garlic cloves micro minced
1 tablespoon curry powder
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon dry mustard
1/2 teaspoon cinnamon
1 teaspoon turmeric
2 tablespoons tomato paste
1/4 cup brown sugar
squeeze of lemon or lime juice
salt and pepper to taste

My additions:
8 tomatillos chopped fine
handful of shishito peppers, chopped
8 or so cherry tomatoes, chopped

Rinse lentils, drain, and cook in medium saucepan covered in three cups water till soft. Add more water if necessary. Add remaining ingredients and cook till ingredients are melded. I served this over long grain brown rice. It was so delicious.
